Bean Prepared for Spring: The Beans You Need to Bag Early

Spring is a season of renewal, and at Cacao Latitudes, that means fresh harvests, returning favourites, and a handful of rare lots worth planning for. This preview highlights what’s available now, what’s arriving soon, and the limited micro-lots to keep on your radar.

From classic Ghana profiles to delicate Dominican butter and rare Mexico releases, the months ahead bring new flavours, new origins, and small-volume opportunities.

Ghana: Three Mountains Cocoa Organic

Available end of April | Always range

Tasting notes: Blackcurrants, gingerbread & roasted nut

Applications

Ghana beans are a classic for a reason. They offer a nostalgic chocolate profile as a single origin, while also bringing balance in blends. Their structure softens acidity, rounds out fruit-forward profiles, and supports more expressive origins without overpowering them.

A word from the team : “They understand the implications around organic farming and particularly the benefits that they get from them on the health level. The farmers really see the benefits of organic fertilising, and absence of chemicals as a very good thing for the children and for the environment” [Khalid, UK Sales Rep]

Dominican Republic: Zorzal Comunitario – Butter & Powder

Available end of May | Always range

Tasting notes

Butter: Delicate cocoa flavour, nutty & sweet undertone

Powder: Chocolate, roasted almonds & malt

Applications

Zorzal cocoa butter is ideal for single origin bars and couvertures, bringing a delicate cacao flavour that integrates without overpowering. The cocoa powder offers a rounded chocolate note suited to truffles, cakes, cookies, and pastry applications. A rare opportunity to bake and create with a fully traceable single origin ingredient.

A word from the team : “Following Ramon to the drying beds to see “el cacao que está bonito” captures what makes Zorzal special. Time in the QC lab tasting liquor and chocolate together, and watching baba arrive at reception reveals how flavour begins to take shape – long before the beans leave origin.” Paula Navarrete (US head of sales and quality manager)

Uganda: Bukonzo & Rwenzori – Latitude Trade

Available end of May | Always range

Tasting notes: Red fruits, gingerbread & brownies

Applications

Uganda beans create vibrant single origin bars with notes of red fruit and candy-like sweetness. They also pair beautifully with Latin American cacao in blends, adding brightness while maintaining structure.

A word from the team :“I was delighted to visit Latitude Trade and connect with growers and their families. The logistics required to deliver quality cocoa from remote farms is impressive. Distance is beautiful – but if not managed, it can mean disaster for quality.” [Kate, Founder & General Manager]

Rare Range: Pakal & Finca Don Jorge – Mexico

Available now | Rare range

Volumes: Extremely limited

Tasting notes

Pakal: Honey, citrus, walnut & cookies

Finca Don Jorge: Dry apricots, caramel & cookies

Applications

These micro-batches are ideal for seasonal bars, limited releases, or standout inclusions. Their small volumes make them especially suited to short runs and special projects.

Finca Don Jorge is more than a beautiful farm, it’s a conservation project in action. Native forests protect species like the ocelot and cinnamon-breasted hummingbird, while dedicated regeneration areas support threatened ecosystems. The farm is also home to rare Criollo Blanco cacao, prized for its pale white beans and delicate flavour profile.  Each lot contributes directly to biodiversity preservation alongside distinctive flavour.
